Strawberry Surprise

Strawberry vanilla cupcakes are the most fundamental baking recipe as they include all your usual combination of ingredients needed for cupcakes that can easily be sourced from your local supermarket. What’s more, this particular recipe has been tweaked so that its not overly sweet!

What you’ll need:

1. For the cupcakes

  • Butter (57g)
  • Cake flour (125g)
  • Sugar (100g)
  • One big egg
  • A pinch of salt
  • Baking powder (1/2 tablespoon)
  • Baking soda
  • Vanilla essence (2 teaspoons)
  • Full cream milk (80ml)

2. For the buttercream

  • Butter (250g)
  • Powdered sugar (120g)
  • Vanilla essence (1 tablespoon)
  • Full cream milk (30ml)
  • Strawberries (3-4 pieces)

Steps:

#1 Keep the butter at room temperature, beating it on medium speed until it’s creamy. Then add in the sugar and continue mixing till you get a pale and airy mixture.

#2 Whilst continuing to mix at the same speed, incorporate the egg, and then add 30ml of the milk and vanilla.

#3 Preheat the oven at 165 degrees celsius.

#4 Sift half the cake flour, baking soda and powder, and salt mixture into the batter. Use a spatula to fold the flour mixture into the batter. If the batter gets too dry, add a little milk and continue sifting in the next half of the flour right after.

#5 Scoop the ready batter into cupcake moulds and bake for 18-20 minutes (make sure to check on your cupcakes at the 18 minute mark and extend the time if they aren’t yet ready!)

#6 Beat the second bar of butter till it’s pale and creamy and add half the powdered suger in. Continue to whip it.

#7 Mix in the vanilla essence and add the remaining sugar. Then add a sufficient amount of milk into the mixture.

#8 Decorate your cooled cupcakes with the buttercream and top them off with strawberries (you can leave them whole or halve them). You can also sprinkle icing sugar onto the cupcakes for extra effect!
